27 articolimin 24 hours fermented (proven dough), made with fine high-gluten Italian flour. The long fermentation ensures easier digestion of the dough. The dough is easier to digest and does not burden the stomach. The discoloration of the dough, or the darkening of the edges, is caused by a reaction during short baking at very high temperatures. The high temperature causes the edges to caramelise, giving them their characteristic colour.
